The smoked salmon rolls can be made well in advance of a meal. Make the money purses one by one, making sure that you cover the filo pastry you are not using with a slightly dampened cloth so that it doesn't dry out. If you want to serve the purses straight out of the oven, you can leave them in the fridge beforehand for a few hours covered with cling film, but don't forget to brush them with melted butter again before cooking.
