Red Onion Soup with Goats' Cheese Toasts

This is a quick and easy soup for the winter. The red wine makes it a bit special; so it's something that you can serve to guests, even special guests. I like to use a local Loire Valley red wine for this recipe and accompany with a goats' cheese from the same region, but naturally any good lightly tannic red wine will be fine.
